Delicious Sausage and Potato Dinner: Bangers and Mash with Flavorful Onion Gravy for the Whole Family

For the Bangers:
- 8 pork sausages
- 2 tablespoons extra virgin olive oil (1 tablespoon for sausages and 1 tablespoon for the gravy)

- 2 pounds potatoes, peeled and diced
- 4 tablespoons butter
- ½ cup milk
- Salt and pepper to taste
For the Onion Gravy:
- 2 large onions, thinly sliced
- 2 tablespoons all-purpose flour
- 1 cup beef broth or stock
- 1 teaspoon balsamic vinegar
- 1 teaspoon sugar
- 1 sprig fresh thyme (optional)
- Salt and pepper to taste

- Heat a large skillet over medium heat with 1 tablespoon of olive oil. Add 8 pork sausages and cook, turning occasionally, until they are firm and golden brown (about 20 minutes). Set them aside and cover with foil to keep warm.
- While the sausages are cooking, place 2 pounds of peeled and diced potatoes in a pot of salted water and bring to a boil. Cook until tender, approximately 15-20 minutes.
- Drain the potatoes and return them to the pot. Add 4 tablespoons of butter and ½ cup of milk, then mash until smooth. Season with salt and black pepper to taste.
- In another large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add 2 sliced onions and cook, stirring occasionally, for about 10 minutes or until they are softened and lightly browned.
- Sprinkle 2 tablespoons of flour over the onions and stir to coat. Cook for 1-2 minutes, stirring constantly.
- Slowly pour in 1 cup of beef broth, whisking constantly to avoid lumps. Add 1 teaspoon of balsamic vinegar and 1 teaspoon of sugar, then season with salt and black pepper to taste.
- Bring the gravy to a simmer and cook for 5-10 minutes, stirring occasionally, until it thickens.
- To serve, place a scoop of mashed potatoes on each plate, top with two sausages, and spoon the onion gravy over the top.
